Vegan GF Protein Pancakes

Four years ago I started getting really into fitness and eating well. When I first began that journey I followed people such as Whitney Simmons, Stefanie Moir, Natalie Matthews, Libby Christensen, and more.
Natalie Matthews (aka FitVeganChef) gave me a lot of inspo for healthy, protein-packed meals that are easy to make! Here is her recipe for vegan, GF protein pancakes that I make ALL the time. So easy and yummy! I switch between making them pancakes and waffles :)
Ingredients: (I typically double this as I like to have extra for family or for myself for the week.)
1/2 cup oats*
1 scoop plant protein of choice
2 teaspoons cacao powder
1 teaspoon flax meal
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup water or plant-based milk
Steps:
Turn the waffle maker on to the highest heat setting. If you do not have a non-stick waffle maker, spray a little bit of coconut oil to prevent the waffles from sticking.
In a food processor, combine oats, plant protein, flax meal, cacao powder, baking powder, and baking soda. Pulse 2 to 3 times.
Add water and process all the ingredients until they are well combined and form a batter.
Pour batter into the hot waffle maker and wait 1 minute before closing it. Heat waffles for 6-10 minutes or until desired consistency. I like mine crunchy, so I leave them for the full 10 minutes. Repeat the process until all the batter is gone. Enjoy hot.
*I’ve found that as I’m cooking, the oats start to absorb more and more of the water. Over time I add little bits of water just so the mix stays batter-like. **Be careful not to add too much because then your waffles might lose flavor!!
Finally, I like to top off my pancakes/waffles with fresh berries, maple syrup, almond butter, and a little bit of cinnamon! Then enjoy!!
